Organoleptic identity

The Coratina monocultivar from the lands of the Berici Hills reveals a medium fruity trend that stands on typical herbaceous aromas and a vegetable component of artichoke and green tomato leaf.

The last sensation intensifies as time passages. Coratina, queen of Italian olives, showes its typical density on the palate. It maintains a vegetable chlorophyll character with dried hay components and a retroactive sensation of Mediterranean scrub.

On the palate it loses some of its bitter character and leads to a sensation of cooked herbs evolving to walnut husk and dried fruit.

The polyphenolic richness is evident from the spicy character that is intense in the first period after milling. This character softens and remains on average intense over time.

Pairing with food

Offers gastronomic verve to dishes based on vegetables. It goes very well with blue fish such as marinated anchovies or grilled mackerel.
