Organoleptic identity
“ORO” olive oil of the Rebène , obtained from the pressing of seven different types of cultivars, stands out for the kindness of aromas and its balanced and elegant character.
It is distinguished by a delicate fruity component of crispy fresh olive and recalls artichoke, golden apple and citrus peel.
The chlorophyll character then passes to a delicate sensation of fresh grass that over time evolves into a feeling of dried heather and flowering hay from the pasture.
On the palate it discloses a slightly bitter and very balanced sensation. It has an elegant density that gently envelops the palate and leaves it dry at the end.
It provides retroactive sensations of tomato leaf and thyme. Well calibrated, elegant spiciness.
The overall aromatic sensation is delicate and persistent.
Pairing with food
Excellent on freshly picked vegetables. Ideal for flavoring slightly acidic fresh cheeses such as crescenza, stracchino and Casatella DOP. Enhance a caprese with buffalo mozzarella DOP.
