In 2015 our Carmenère and Cabernet Sauvignon grapes reached full phenolic ripeness: the characteristics of the two vines are best expressed in this blend
Organoleptic Notes
Intense ruby red color with purplish blue reflections. It is intense, with aromas of ripe cherries, a beautiful balsamic freshness, with hints of spices, soft and velvety tannins.
In the mouth it enters enveloping, full-bodied, mineral and savory, complex and persistent.
Pairings
Red meats, game, cold cuts and cheese.

Winemaking
Spontaneous fermentation of pied de cuve in steel tanks.
Destemming of the grapes, inoculation with pied de cuve, maceration and fermentation for 16 days in vitrified concrete tanks, with daily pumping over and punching down.
Drawing off, pressing and decanting in concrete tanks, further decanting in tonneaux for 12 months and in cement tanks for a further 8 months. Bottling in its own cellar.
