Organoleptic Notes
The elegant appearance reflects the classicism of the varietal, with floral notes that refer to rose petal and Karkadè, but also fruity notes of cherry reminiscent of Porto Ruby. The flavor is full-bodied and at the same time the wine is remarkably easy to drink.
Pairings
Vicenza-style cod, mackerel, cured meats (“Soppressa Vicentina D.O.P.”) and cotechino.
Longevity: over 10 years
Vinification
The hand-harvested grapes are immediately destemmed and transferred into the barrels by gravity.
Subsequently, with the addition of the “pied de cuve” prepared from our grapes, fermentation occurs spontaneously and continues for approximately 10 days in vitrified concrete tanks, accompanied by daily pump-overs and punch-downs.
After racking and pressing, the wine was transferred and aged for over 6 months in vitrified concrete tanks and then bottled in our winery.
