Description

Tai Rosso is a native grape variety included in the DOC Colli Berici designation.
The calcareous and clay soils of our vineyards, located at an altitude of 300 meters, enable the production of grapes of exceptional quality.

Organoleptic Notes

Garnet notes in color, the spicy notes stand out on the nose compared to the fresher fruit. In the mouth the hard notes are balanced with the soft notes. Light almond note on the finish.

Lasagna with ragù, soppressa vicentina, cod Vicentina style

Vinification

The hand-harvested grapes are immediately destemmed and transferred into the barrels by gravity.

Subsequently, with the addition of the “pied de cuve” prepared
from our grapes, fermentation occurs spontaneously and continues for approximately 10 days in vitrified concrete tanks, accompanied by daily pump-overs and punch-downs.

After racking and pressing, the wine was transferred and aged for over 16 months in vitrified concrete tanks and then bottled in our winery
