From a vine that was thought to be extinct after the phylloxera epidemic at the end of the 19th century, our Carmenere Del Rebene was born, which here on the Berici Hills has found a new life after it had been called Bordeaux Nero or Cabernet Vecchio for years
Organoleptic Notes
Ruby red color. Clean and fragrant, it is fruity, with cherry aromas, balsamic notes and hints of incense and spices, soft and velvety tannins.
The palate is juicy, fine in tannin, tasty enough to lengthen in the aftertaste with a peppery and tasty naturalness.
Pairings
Red meats (beef and lamb), game, cold cuts and cheeses.
Winemaking
Spontaneous fermentation of pied de cuve. Destemming of the grapes, inoculation with pied de cuve, fermentation and maceration for over 15 days in vitrified concrete tanks, with daily pumping over and punching down.
Drawing off, pressing and decanting in concrete tanks, and aging for over 10 months. Bottling in our cellar.
