Description

Carmenère was confused with Cabernet Franc for many years. Since 2009 it has been recognized as DOC Carmenère Colli Berici.

Here in San Gottardo at 300 meters above sea level, the Carmenère grapes reach full maturity, giving the most characteristic aromas of the vine.

With a clear garnet color, it has a thick and deep texture with a vivid nail that denotes the ability to evolve over the years.

Dry and pulpy, it offers a pleasant austere sensation that finds a virile trait in the impact with the fine and mature tannin.

Characterized by a savoury length and a very light mouth, with an original final note of quinine and eucalyptus.

Red meats (beef and lamb), game, cured meats and cheeses.

Longevity : over 10 years

The hand-harvested grapes are immediately destemmed and transferred into the
barrels by gravity. Subsequently, thanks to the inoculation of the “pied de cuve”
prepared with our grapes, fermentation occurs spontaneously and continues for
approximately 10 days in vitrified concrete tanks, accompanied by daily pump-overs and punch-downs.
After racking and pressing, the wine was transferred and aged for over 18 months in vitrified concrete tanks and finally bottled in our winery.
