Description
The Carmenère grape variety finds the ideal place to best express its characteristics in the marine limestone soil of the Berici Hills.

Organoleptic Notes
Ruby red color. Clean and fragrant, it is fruity, with cherry aromas, balsamic notes and hints of incense and spices, soft and velvety tannins.
The palate is juicy, fine in tannin, tasty enough to lengthen in the aftertaste with a peppery and tasty naturalness.
Pairings
Red meats (beef and lamb), game, cold cuts and cheeses.
Vinification
The hand-harvested grapes are immediately destemmed and transferred into the barrels by gravity.
Subsequently, thanks to the inoculation of the “pied de cuve” prepared with our grapes, fermentation occurs spontaneously and continues for approximately 10 days in vitrified concrete tanks, accompanied by daily pump-overs and punch-downs.
After racking and pressing, the wine was transferred and aged for over 10 months in vitrified concrete tanks and finally bottled in our winery.
