Description

In 2021, we harvested our Cabernet Franc grapes and vinified them as a single varietal. After two weeks of maceration on the skins in concrete tanks and then aged for 30 months in steel barrels, the wine was bottled in our cellar.

Organoleptic Notes

A ruby-red wine with a floral nose, it has a surprising freshness and a dense, velvety palate that suggests excellent potential for tertiary aging.

Aged cheeses, especially sheep’s or goat’s cheeses, Vicenza-style pasta and beans, vegetable and legume soups, and grilled red meats.
Spontaneous fermentation of the pied de cuve in stainless steel tanks. Specifically, after destemming the grapes, the pied de cuve was inoculated and fermentation was followed by daily pumping over and punching down.

Racking, pressing, and racking into steel tanks where the wine aged for 30 months before bottling in our cellar.
